It all starts with famed French chef Auguste Escoffier and his friendship with an Australian opera singer named Nellie Melba. Simply infuse peaches in a vanilla syrup and serve with vanilla ice cream and raspberry sauce. It is such an impressive combination of flavors and colors that it would make an elegant enough French dessert to offer to your dinner guests. Of course, nothing is to stop you from enjoying this ice cream sundae a like in the middle of the afternoon with the kids either.
- Verrine – Pandan Mango
Pandan Mango Verrine has three main layers which consist of Mango, Pomelo, Pandan Mousse, Coconut Mousse, Coconut Streusel. The pandan on top paired with coconut mousse in the middle and chopped sweet mangoes and pamelo segment at the top layer, backed by coconut fragrance rice. Pandan leaves are long, narrow, thin leaves that are originally from Southeast Asia. It has a unique taste with nutty overtones and a scent that is almost similar to Jasmine rice. In Asian cooking, they are used in savory dishes and desserts.

Craquelin is a simple frozen paste of butter, sugar and flour, which forms a crispy crackled crust on the buns, giving them an extra level of texture and flavour. The sweet, crunchy topping for these light choux puffs is a frozen mixture of brown sugar, butter and flour. After baking, the buns are filled with a berries compote, finished with vanilla cream and orange blossom whipped chantilly.
